Influence and Western popularity : Thai food is known for its enthusiastic use of fresh (rather than dried) herbs and spices as well as fish sauce. Thai food is popular in many Western countries especially in Australia, New Zealand, some countries in Europe such as the United Kingdom, as well as the United States, and Canada.

Serving : Instead of a single main course with side dishes found in Western cuisine, a Thai full meal typically consists of either a single dish or rice khao (Thai: ข้าว) with many complementary dishes served concurrently.

Rice is a staple component of Thai cuisine, as it is of most Asian cuisines. The highly prized, sweet-smelling jasmine rice is indigenous to Thailand. This naturally aromatic long-grained rice grows in abundance in the verdant patchwork of paddy fields that blanket Thailand's central plains. Steamed rice is accompanied by highly aromatic curries, stir-frys and other dishes, incorporating sometimes large quantities of chillies, lime juice and lemon grass. Curries, stir-frys and others may be poured onto the rice creating a single dish called khao rad gang (Thai: ข้าวราดแกง), a popular meal when time is limited. Sticky rice khao neow (Thai: ข้าวเหนียว) is a unique variety of rice that contains an unusual balance of the starches present in all rice, causing it to cook up to a sticky texture. It is the daily bread of Laos and substitutes ordinary rice in rural Northern and Northeastern Thai cuisine, where Lao cultural influence is strong.














Noodles, known throughout parts of Southeast Asia by the Chinese name kwaytiow, are popular as well but usually come as a single dish, like the stir-fried Pad Thai (Thai: ผัดไทย) or noodle soups. Many Chinese cuisine are adapted to suit Thai taste, such as khuaytiow rue, a sour and spicy rice noodle soup.

     There is a uniquely Thai dish called nam prik (Thai: น้ำพริก) which refers to a chile sauce or paste. Each region has its own special versions. It is prepared by crushing together chillies with various ingredients such as garlic and shrimp paste using a mortar and pestle. It is then often served with vegetables such as cucumbers, cabbage and yard-long beans, either raw or blanched. The vegetables are dipped into the sauce and eaten with rice. Nam prik may also be simply eaten alone with rice or, in a bit of Thai and Western fusion, spread on toast.

     food is generally eaten with a fork and a spoon. Chopsticks are used rarely, primarily for the consumption of noodle soups. The fork, held in the left hand, is used to shovel food into the spoon. However, it is common practice for Thais and hill tribe peoples in the North and Northeast to eat sticky rice with their right hands by making it into balls that are dipped into side dishes and eaten. Thai-Muslims also frequently eat meals with only their right hands.

     Often Thai food is served with a variety of spicy condiments to embolden dishes. This can range from dried chili pieces, or sliced chili peppers in rice vinegar, to a spicy chili sauce such as the nam prik mentioned above.










: The ingredient found in almost all Thai dishes and every region of the country is nam pla (Thai น้ำปลา), a very aromatic and strong tasting fish sauce. Shrimp paste, a combination of ground shrimp and salt, is also extensively used.








Ingredients


Thai dishes in the Central and Southern regions use a wide variety of leaves rarely found in the West, such as kaffir lime leaves (Thai ใบมะกรูด). The characteristic flavour of kaffir lime leaves' appears in nearly every Thai soup (e.g., the hot and sour Tom yam) or curry from those areas. It is frequently combined with garlic, galangal, lemon grass, turmeric and/or fingerroot, blended together with liberal amounts of various chillies to make curry paste. Fresh Thai basil is also used to add fragrance in certain dishes such as Green curry. Other typical ingredients include the small green Thai eggplants, tamarind, palm and coconut sugars, lime juice, and coconut milk. A variety of chilies and spicy elements are found in most Thai dishes.

Other ingredients also include pahk chee (cilantro), rahk pahk chee (cilantro roots), curry pastes, pong kah-ree (curry powder), si-yu dahm (dark soy sauce), gung haeng (dried shrimp), pong pa-loh (five-spice powder), tua fahk yao (long beans or yard-long beans), nahmahn hoi (oyster sauce), prik Thai (Thai pepper), rice and tapioca flour, and nahm prik pao (roasted chili paste).

Although broccoli is often used in Asian restaurants in the west in pad thai and rad na, it was never actually used in any traditional Thai food in Thailand and is still rarely seen in Thailand.

The History of Thai Food

     Thai food is internationally famous. Whether chilli-hot or comparatively bland, harmony is the guiding principle behind each dish. Thai cuisine is essentially a marriage of centuries-old Eastern and Western influences harmoniously combined into something uniquely Thai. Characteristics of Thai food depend on who cooks it, for whom it is cooked, for what occasion, and where it is cooked. Dishes can be refined and adjusted to suit all palates.




     Originally, Thai cooking reflected the characteristics of a waterborne lifestyle. Aquatic animals, plant and herbs were major ingredients. Large chunks of meat were eschewed. Subsequent influences introduced the use of sizeable chunks to Thai cooking. With their Buddhist background, Thais shunned the use of large animals in big chunks. Big cuts of meat were shredded and laced with herbs and spices. Traditional Thai cooking methods were stewing and baking, or grilling. Chinese influences saw the introduction of frying, stir-frying and deep-frying. Culinary influences from the 17th century onwards included Portuguese, Dutch, French and Japanese. Chillies were introduced to Thai cooking during the late 1600s by Portuguese missionaries who had acquired a taste for them while serving in South America. Thais were very adapt at "Siameseising" foreign cooking methods, and substituting ingredients. The ghee used in Indian cooking was replaced by coconut oil, and coconut milk substituted for other dairy products.


     Overpowering pure spices were toned down and enhanced by fresh herbs such as lemon grass and galanga. Eventually, fewer and less spices were used in Thai curries, while the use of fresh herbs increased. It is generally acknowledged that Thai curries burn intensely, but briefly, whereas other curries, with strong spices, burn for longer periods. Instead of serving dishes in courses, a Thai meal is served all at once, permitting diners to enjoy complementory combinations of different tasters.

     A proper Thai meal should consist of a soup, a curry dish with condiments, a dip with accompanying fish and vegetables. A spiced salad may replace the curry dish. The soup can also be spicy, but the curry should be replaced by a non-spiced item. There must be harmony of tastes and textures within individual dishes and the entire meal.

     Thailand has one of the world's most diverse marine habitats, with more than 300 major reef groups covering an area of over 4,500 square miles. From pinnacles and submerged rocks, through to stunning coral gardens and sheer walls, the scuba diving in Thailand has something to offer scuba divers of all levels of experience. It is this diversity in marine habitats and diving environments which attracts so many divers to the waters around Thailand every year, and today the region is one of the world's most popular scuba diving destinations.



     There are a number of major diving destinations in Thailand, all offering a wide selection of diverse dive sites. Throughout all of these major destinations is a network of well equipped, knowledgeable and experienced dive centres, offering a range of diving from leisure dives through to a selection of scuba diving courses.



     It would be impossible to discuss Thailand, without looking at the scuba diving in Phuket and the surrounding areas. Without doubt, the diving in Phuket is of the highest standard, and the waters surrounding the 'island' host a number of excellent dive sites. However, the real underwater treasures of Phuket lie slightly further afield. Dive sites such as the Burma Banks, The Similan Islands and the Mergui Archipelago are often found high on the wish list of many discerning scuba diver and offer some of South East Asia's finest dive sites.



     The scuba diving on the Western Gulf of Thailand sees a different emphasis, and the small islands found here have become one of the world's most popular areas to learn to scuba dive. In fact, the island of Koh Tao has developed a complete tourist industry from scuba diving, and today large numbers of would be scuba divers travel to Koh Tao every day to begin their diving education. Other islands within the Western Gulf of Thailand are also home to developed scuba diving industries, and destinations such as Koh Samui and Ko Pha-Ngan are both home to a large number of dive centres and excellent dive sites.

     Throughout Thailand there are a number of exceptional dive sites, and sites such as the Richelieu Rock and Chumpon Pinnacle are widely acknowledged as being world class dive sites. However it is the sheer volume of excellent dive sites that makes Thailand such a popular destination. Destinations such as Pattaya, Krabi, Ko Chang and the Surin Islands are all home to a number of exceptional dive sites and dive centres.


     Today, Thailand is one of the world's most popular scuba diving destinations, and large numbers of scuba divers travel long distances to dive in the waters surrounding this stunning country. The sheer diversity of the diving on offer here ensures that there is something to cater for all tastes and levels of experience. From vertical wrecks, through to submerged pinnacles, from the largest sharks, through to the smallest nudibranches, the diving in Thailand has something for everyone.

Songkran Water Festival

Many tourists from all over the world visit Thailand, especially Khao Sarn Road in Bangkok during April to take part in the water festival (Songkran) festivities. To those tourists who have been in action during the friendly yearly water fights, I am sure it was very fun. I thought so too until a few years ago, when I visited Myanmar during dates coinciding with Myanmar's version of Songkran. The Myanmese called the water festival (Thingyan).


In Thailand's version of the Songkran water festival, people loaded up tanks of ice cold water in pick up trucks going around splashing and drenching everyone who is within range all in good fun. Some, like the picture above load water guns and ice cold squirt at you you are expected to retaliate with... what else, cold water of course.


Now this festival although coming from the same custom is celebrated differently in Myanmar. It is much more wild and rancuous.The Myanmese authorities will build stages after stages called "pandles" on sides of main roads. Some of these stages will have live music bands, dances, gay models and bodybuilders on parade amplified by music blaring loudly from the speakers and PA system, others will be packed chocked full of people armed with wildly colorful hoses splashing tons of water on whoever wants the showers of blessings on them.


The Yangon (former capital city of Myanmar) hotel Tourist stayed in organised a tour of the city on the back of... yup, you said it... pick up trucks with refreshment, water guns and large drums of ice cold water ammunition. This is certainly much more fun than the Thai version, especially if you bring your whisky along. The roads were flooded and water was flowing like small rivers.


So if you ever visit Thailand for its Songkran festival, then hop over to Myanmar to open a second water war front. A word of warning though, better book your hotel room or accomodation and air travel tickets early. The hotel rooms are always booked months in advance by fun loving tourists both in Thailand and Myanmar.

The festivities will usually last a few days every April. After hard day at play, do remember that Thailand is famous for its Thai massage. Do get a massage to soothe those aching muscles after a few days of fun. You can even order a massage service from the hotels.

Water Festival of Loi Kathong - Koh Chang, Thailand

     Thailand is a land of enchanting and exotic tastes for foreign visitors as I was to learn when I experienced the Water Festival of Loi Kathong on the island of Ko Chang.


     In October 2003, the travel bug seriously bit me. The symptoms led me to sell my business, pack a small backpack with necessary items and roll into Los Angeles International Airport with a major credit card and an attitude. A few days later, I was in Thailand and headed for the island of Ko Chang, located close to the border with Cambodia in the Gulf of Thailand.




     Koh Chang is a heavily forested island with little towns full of beach huts. This is what I was exactly what I was after. Spending days lounging in the sun and contemplating my navel. Unfortunately, I soon experienced the local bacteria, which was not what I was after.


     Since I had rented my beach hut for a week with payment in advance, the family running the place looked me upon favorably. They took pity on me and I was soon growing fat on Tom Yom Kung and other soups and curries. After four days, I had finally kicked the bug and felt halfway human. This was good news as it was the night of the full moon water festival.



     I had heard of full moon festivals in Thailand. For hard partying tourists, this was apparently the night the big beach parties happened. In Ko Chang, it was a little different as the night was tailored to the actual Thais, not tourist.


     The Loi Kathong Festival happens every full moon. Offerings are given to appease the water spirits. These offerings come in the form of banana leaf bowls with flowers, fruit, candles and incense. The candles and incense are lit and everyone heads down the beach and starts putting them in the water. It is one of the more amazing light shows you will ever see and beats Las Vegas hands down. Thousands, and I mean thousands, of little lights bobbing on the surface of the smooth ocean.

     After the bowls comes one of the most visually amazing things I've ever seen. Everyone is familiar with the paper lanterns used in Asia. Typically, they come in the form of a rectangle form with a bamboo or light wire frame. Very popular with college students since they are cheap and look better than a bare light bulb.

     For the festival, Thais would take these paper lanterns and close off the top. They would then affix a small this paper plate to the bottom with a candle on it. Light the candle, wait for the heat to do its work and they had an instant hot air balloon. Once the lanterns could float, you simply let go and off the slowly went over the ocean. It was a sight to see as there were thousands of them floating over the water.

     As the festival wound down, the ocean had been transformed. The air was full of gracefully floating lanterns while the water itself was dotted with slowly bobbing points of light.

     If you intend to travel to Thailand, make sure you schedule your trip around a full moon. It is a scene you'll never forget.

Rock Climbing - Thailand's The Spot

Mention Thailand and images of beaches, elephants and Bangkok come to mind. Less known is the fact Thailand rock climbing is some of the best in the world.

Located in Southeast Asia, Thailand is bordered by Cambodia, Burma and Laos in the north and Malaysia in the south. The shape of the country is somewhat similar to Italy, and you'll find similar differences between northern and southern Thailand that you do in Italy. For rock climbing enthusiasts, the south of Thailand is where the action is.

The rock formations in Thailand are almost universally limestone. The level of climbing can be as simple as bouldering or as challenging as tackling over vertical cliffs. This makes Thailand a popular rock climbing destination since it has a little something for everyone.

Krabi

Located on the southern section of the "tail" of Thailand, Krabi has a wide variety of rock climbing challenges. Most of the climbs in this area are of the pre-bolted sport route variety. There are literally hundreds upon hundreds of climbs with difficulty levels from beginner to multi-pitch knuckle crushers.
The beauty of climbing in Krabi is... well, the beauty. While you might have visions of jungles and mosquitoes when thinking of Thailand, Krabi is an area of a different sort. Most of the climbs have been set up on cliff faces on the beach. Being natural capitalists, the Thai's have built hotels, bars and so on at these locations. As a result, you can literally climb a multi-pitch route for five hours, cool off with a swim and then have a beer. If there is such a thing as a rock climbing heaven, many feel Krabi is it.
Before you cash in your savings, keep in mind that Thailand is a seasonal vacation spot. If you go during the wet season, there is a good chance you'll just end up sitting around drinking beer. While that isn't too bad, you'll go crazy looking at the climbs that are so close, but oh so far away.
Generally, you want to head to Thailand from late November through maybe April. The summer months tend to be both incredibly hot and wet. Make sure you pull up forecasts for the area before booking a trip.
Flying to Thailand is inexpensive, but flights are incredibly long with stopovers. Still, it is all worth it once you experience Thailand rock climbing.


Thailand - The Land of Smiles and Cheap Travel


Thailand is known as the land of smiles, which is amazing considering the traffic jams in Bangkok. For budget travelers, Thailand simply can't beat on price alone.

Thailand is an odd mix of contrasts. It can be extremely stressful while trying to get around in Bangkok and gloriously relaxing while laying on practically any of the beaches that populate the coast of the country. Regardless of the situation, the Thais have a habit and custom or smiling regardless of what you ask or how you ask it.

Beaches

The beaches of Thailand need no introduction. Used as the setting for hundreds of movies, they come in a variety of styles. The beaches of Phuket and Phi Phi fall along the lines of traditional beach resort areas like you might find in a place such as Cancun, Mexico or Tamarindo, Costa Rica. On the other end of the scale, you can find more rustic beach areas in places like the island of Ko Chang where you'll have a few beach bungalows, a couple of bars and one or two stores. If you're looking for a little of both styles, just ask around.

The North


Infatuated with the beach life, many people fail to head up country when in Thailand. This is a mistake as the north is the host to such locations as the city of Chang Mai, the Summer Palace of the King of Thailand and interesting little villages. For the outdoor enthusiasts, rafting, hiking and mountain biking are very popular and widely available.

Prices


If you're on a budget, Thailand is a perfect travel destination. For some reason, flights to Thailand are particularly cheap with my recent flight on Korean Airlines running roughly $650 round trip. Once in country, your money will go a long, long way.

I think a note of caution is need at this point. Please beware. If you decide to take a trip to Thailand, you won't want to come back to your native country. You will, however, definitely come back to Thailand!

     The true magic you'll find when you travel to Thailand is its alluring authenticity. Thailand is the only Southeast Asian nation never to have been colonized by European powers; consequently, the still-standing and functioning monuments of the past attract visitors who admire thousands of years of history integrated into present day society.

     Even more appealing, Thailand offers the diversity of a society running in parallel: booming city life and leisurely beach escapes, thickly canopied jungles and white sand islands, indulgent cuisine, clubs and cocktails and the sanctuary of Buddhist lifestyle. What is in a Name?

     The Kingdom of Thailand was known as Siam until 1939, when a bloodless revolution instated a constitutional monarchy and the name was changed to literally mean "free" land. The original kingdom was founded in 1238, but largely influenced throughout history by China and India.

     Geographically, Thailand is surrounded by countries whose turbulent 20th century histories have defaulted tourism into its exotic but more accessible borders. For this reason, Thailand is also a wonderful home base from which to explore Cambodia and Laos to the east, Myanmar (Burma) to the west, and Malaysia to the south.



Wat You Waiting For?

     Thailand is littered with just as many exciting cities as beautiful beaches. Where you might notice the imbalance is in the inconceivable number of temples, or wat. As the main center of the very north, Chiang Mai is a large, beautiful and historic city. A visit to the famous Night Bazaar or the nearby Wiang Kum Kam archeological ruins is certainly not enough to distract even the most oblivious from the more than 300 Buddhist temples that sprinkle the skyline with shiny gold, red and green hues





     Make sure to visit Wat Chiang Mun, the city's (and possibly Thailand's) oldest temple, located within the old city walls and dating back to 1296. Heading south, do not miss Ayutthaya and Sukhothai, Thailand's two former capitals (the latter being the founding city) classified as World Heritage Sites filled with hundreds of beautifully maintained temples, statues and bustling human activity, all embedded within the lush green environs.



     Bangkok is perched on the Gulf of Thailand, but this humming, vibrant and congested 24-hour capital city is a far cry from the resort cities and towns found east and south along Thailand's sub-tropical coastline. Thailand extends south into the Kra Isthmus, providing for extensive coastline and some of the most filmed beaches in the world
     Phuket is the most famous resort island, but more rewarding is a trip to one of the smaller and less commercialized areas. Ko Tao is of particular interest for scuba divers, while Ko Pha Ngan has become famous among younger travelers for its regular full moon festivals held all night on the sparkling shores. Ko Phi Phi is far more breathtaking in person than even the camera angles of the film "The Beach" could do it justice.
     Some rudimentary social customs aside, Thailand is an extremely easy going and welcoming travel experience. Everything from simple to luxurious is at your disposal, and all with a very fair price tag, not to mention an unbeatable combination of picturesque beaches, rainforested mountains, and an intense metropolitan culture. Hot And Spicy - Is That What Thai Food All About?
Of course not. But, for better or worse, Thai cuisine cannot losen its association with that hot and spicy taste of chilies. People tend to overlook the many other herbs and spices that combine to give Thai food its range of delicacy. It is the very delicate interplay of herbs and spices that makes Thai food so well-loved among all peoples of the world.

The single most outstanding charater of Thai culinary may be the harmonious blend of the three S's of flavor - spicy, salty and sour. This is achieved fundamentally by the three key ingredients.




Chili - Spicy

Despite the paramount importance of chili or "prik" in Thai cooking, it is believed that Thai people only acquired the love for the spicy taste of chili in the 16th century. It is not clear whether the Portuguese or the Spanish merchants were responsible for introducing this chili pepper to the old Siam. In any case, Thai people have since mastered the use of this spice in their cooking blending it with other herbs and flavorings.

The green or red "prik kee noo", literally "mouse dropping chili" is the tiniest but packs a memorable wallop. Don't ever eat it one whole or you can burn your tongue instantly.


Fish Sauce - Salty
     "Nam pla" in Thai, the second most important ingredient of Thai food. It is derived from brewing fish or shrimp mixed with salt and decanting the fermented result into bottles. Don't mistake this with Chinese or Japanese soy sauce. Its aroma of fermented fish can be annoying but when blended into other ingredients it becomes more subtle and unbelievably tasty.

Lime - Sour

     "Manao" (lime) and sometimes "magrood" (kaffir lime) are used at every opportunity in a variety of Thai dishes. Its main role is to suppress the salty taste and strong aroma of fish sauce.

     One very simple use of the 3 main ingredients of Thai cooking is a "prik nampla" sauce where chili is added to fish sauce with some lime and garlic. Add a few drops of this to any Thai dish like "gai yang" (grilled chicken), "khai jeow" (fried egg) or even plain white rice and you can enjoy the punch of spicy, salty and sour Thai flavor. This is what most Thai people cannot do without. And a Thaiphile cannot go about talking Thai food without ever trying "prik nampla" himself!

Thailand is one of the most beautiful and culturally diverse areas in Southeast Asia. Because it was never colonized, it retains much of its original culture.


     The people of Thailand are very friendly and hospitable. There is no language barrier because the staff speaks English and other European languages in most of the hotels, restaurants and tourist places. There are many different modes of transportation in Thailand. Tourists can hire a taxi, take a bus, ride on a train, rent a car or motorcycle or hike on foot through the beautiful countryside. The most interesting ride is the Tuk-Tuk, a three wheel bike, which provides a fantastic open air ride around any city.

     Thailand means "the land of the free", and is blessed with three seasons. Summers runs from February to May. The rainy season extends from June to October. The cold season lasts from November to January. Many people vacation in Thailand during December and January to get away from the cold in their countries over Christmas and New Year's. Thailand has vacationers from all over the world.

     Thailand has a very diverse geography. Tropical islands are found in the southern peninsula. There are many beautiful beaches surrounded by clear, blue waters on one side and tropical jungle on the other. The people here are involved in rubber cultivation, tin mining, and fishing. In the central part of Thailand are paddy fields, farms and many varieties of edible fruits. Here, too, are the ancient ruins of Ayuthaya, the royal capital of the kingdom of Siam, and Sukhothai. The mountains and forests of Thailand are in the north. Many different tribes are located in the mountains. Tourists can visit them from boats or by crossing the rail road lines over the famous river Kwai. They can also see unusual native handicrafts and multicolored orchids. The northeast plateau is famous for its rich archaeological and anthropological findings.

     Thailand is the perfect vacation spot for those seeking a romantic getaway or who want to shop. Gourmets will love the many varieties of sea food. In Chiang Rai, tourists can see the local hill tribe villages of the Akha and Yao. They can also see the ruins of Chiang Saen, Mae Sai and the Golden Triangle. The triangle is where the borders of Burma, Thailand and Laos meet. Together with Chiang Mai, the city sits in one of the artistic and religious centers in Thailand.

Bangkok is the capital of Thailand. The name means "city of angels." Bangkok is a centre of commercial, industrial and cultural activities. The Grand Palace; Wat Phra Keo, which houses the Emerald Buddha; and Dusit Maha Prasat Hall are three of Bangkok's largest attractions.
